Simple as it sounds, use the paintball gun, and shoot a seagull with it. The devil is finding a paintball gun, as they are inventory items, they are used for quests and trading. They pop randomly in chests and also some quests give them out. Keep in mind, some quests you have to give the NPC a paintball gun, so it’ll come out of your inventory. If this happens, you’ll need to get another one before you can get the trophy. The seagull can be found at Colossal Corals, Ornamental Orchard, Pirate Playground, Polar Plains, and Submerged Secrets.
The Paintball Gun can be found in any random chest. Seagulls appear in several biomes, including the first tutorial level Pirate Playground. Equip the Paintball Gun from your inventory, hold to aim and lock onto a Seagull, then press to fire. Hit it while it's in the air and the achievement will pop.
Note that the Paintball Gun is not the same as the Paint Tool.
