For this, I lowered a section of land far down, jumped in and spawned a pig with the create tool. The pig promptly ran into a corner where I went up to him and a button prompt appeared

You can complete this on the very first world. As part of the tutorial, one of the quests you have to solve is to fill a farmyard with pigs and chickens. Simply ride one of the pigs to unlock the achievement.

Pigs are in the farm area of the Pirate world, hop on for a quick trophy.

All you need to do is ride a pig. Find a pig, then press next to them to ride them. Pigs can be found in farm and candy worlds. There’s one in the third tutorial level you can ride to get it easily.

Available in the first world, Pirate Playground. Chase a pig and as you get close the prompt will appear to ride it. Jump on and the achievement will pop.
