Uninterested in exploring? Then the easiest way to get gold for you, is rather than digging for chests, build for chests..
With the landscape tool go to the symbol (or better yet the light source) of any chests you find on your minimap, and on the rough location of the chest build directly down with the largest add terrain box. Any chest will instantly be placed at the top of the world with nowhere else to go.

Whilst doing this look out for other easy methods for getting gold, such as the green trouble makers occasionally carrying gold bricks, sos events where characters are under attack (ice gun is very helpful here) and some character missions..
* Update: At around 90 gold bricks it seemed these methods became ineffective for me, in this case simply go about completing quest areas (green circles on your map) once completed these will become pink circles, ideally to make this as simple as possible, work clockwise around the map completing as many of these as possible. Some of the longer quests will reward you with gold bricks. *
Also ideal to have the Arctic helicopter or some other quick means to travel around in search for the gold bricks. When low gold resource, just move to the next world!
Buy hearts and gold if possible from the balloon vendors too, hearts will be handy for sos missions especially.
** Noted by Hirogen Hunter- Some characters (eg. Skeleton) will allow you the ability to walk underwater freely, eliminating the need to bring chests above water level in order to open them. Only the head is required to attain the ability and you can also use this to get the 3mins under water achievement. **

Basically just a PSA: You can join a friend, have them get one more brick and it will pop any and all gold brick achievements they have already reached.
I.e. My friend had 113, we loaded into a random world, he got his 114th gold brick, and all my achievements unlocked.
Note you might not be notified of all of them e.g. only the 30 and 50 milestones physically “popped” for me but when I went to look at my unlocks, there they all were:)

Collecting Gold Bricks are what are required to obtain upgrades for you and the ship. You’ll get the first ten bricks in the tutorials and then after that will have to bounce around different worlds to complete more quests and discover more items to complete quests. You can also purchase items from the Trader, or tackle some Troublemakers to earn gold bricks. If you find there aren’t many Gold Bricks in a world, then it is a good time to jump to another world to see if more become available. Here’s a list of upgrades after reaching certain Gold Brick thresholds:
