How to unlock the And I Would Plow Five Hundred More achievement in Lightyear Frontier - Definitive Guide
To get this achievement you required to plow 1,000 mounds in field plow mode. And to get this you are required to upgrade your mech with the Upgrade Depot.
You can create the upgrade depot from your build menu with 24 Stone, 4 Aluminum Rods, and 4 Aluminum Frames. Once you have built the depot you can interact with it, docking your mech and then interacting with the computer.
At the top under Mech Upgrades and then under Traversal you will find the Pathmaker upgrade which requires 5 Aluminum Electronics, 4 Aluminum Frames and 9 Polyberry Oils. This upgrade is also linked to this achievement.
Once you have got the Pathmaker upgrade you will be able to unlock the Field Plow tool. This tool requires 26 Aluminum Rods, 5 Iron Frames and 6 Chromaize Oil.
Once you have the upgrade, jump back in your mech and hold & down to enter Field Plow mode. Make sure you are in Creation Mode by pressing Left stick in. Press to drop your Field Plow tool and move forward. You will be in tank like controls so spin around and look for the front with the white square boxes and head straight making mounds as you go. Check behind you or press down to enter third person to make sure the ground is being plowed behind you.
Achievement tracking did NOT seem to be working for this one. The achievement for 500 plows was tracking but not this.
Co-op is tracked separately for this achievement so you will have to individually upgrade, if other players in your game require this. Or you could take turns and quit the day so it doesn't save your progress.

If you are having trouble with tracking like me, saving then quitting the game then re-opening the game unlocked both the 1000 and 500 mounds achievement for me.

This upgrade is found in the traversal section on the right side of the upgrade menu. Once you have obtained the field plow upgrade, simply find an open area and drop the plow and just move forward. Should take about 5-10 mins
