An easy way to grind this is to head to the red vending machine behind the Shop that Mayor sleeps in. Running into the machine will cause a bunch of cans to spill onto the floor. Pick them up one at a time and place them in the recycle bin. Each one will reward you with a shiny. Once you have collected all of them, pause and save your game, then load your previous save. Now, you can run into the vending machine again and do it all over for the achievement and unlimited shinies!

In between the construction site and grandma's grocery store, there is a red vending machine, a blue vending machine, and a recycle bin. If you sprint into the red one it will spit out 8 cans. Grab those, dump them in the recycling bin, then save your game and quit to the main menu. Reload your save and you can hit the red vending machine again. Do this till over and over till the achievement pops.

Cans are easy to come by. They're just laying around, but you can also get them headbutting soda machines, knocking over people carrying cans and stealing them, or finding them in briefcases of people you knock over. Swat the briefcase open where the latch is. You'll find other items this way as well.

This is cumulative, and the game doesn't even tell you about the existence of recycling items. Basically, all those random cans you find around the city can be recycled by picking them up and taking them to a blue recycling bin, which are very common especially near vending machines. Near the recycling bin, you'll get a prompt to press 
to deposit the can in the bin. Doing so counts towards this achievement and also rewards you with a Shiny.

I did it through a bug - you need to press the recycling interaction and immediately meow. The recycling is counted, but the can remains with you. You will understand the success of the attempt by dropping sparkles for recycling.

A few life hacks:
- If you accelerate into soda machines, several cans will most likely fall out of them (but no more than once per machine).
- When you hit one of the machines on the side of the greengrocer's stand, 8 cans will almost always fall out at once.
- After saving and loading the save, the machines will again be filled with cans that can be knocked out with blows.
