This is more of a checklist than a guide, but I thought I would add something since no one else has. There are 11 weapon types:
-Hammer
-Greataxe
-Greatsword
-Polesword
-Axe
-Greathammer
-Sword
-Shortsword
-Staff
-Fist
-Dagger
You can find pretty much all of these without going out of your way. The one that took me longest to find was a greathammer. Figure out which category you're missing, then refer to http://lordsofthefallen.wiki.fextralife.com/Weapons

This seems to be bugged for me. I have checked at least 3 times that I have multiple weapons of each type in my inventory. But, the achievement is still locked. What should I do? :(

There is 11 types or weapons. You need collect one from each type for the trophy. I got it just after the meeting the blacksmith (after dealing the boss Worshipper from the graveyard) and exploring a little of the catacombs (door accessible from the graveyard).
The types are:
Fist Weapons
Daggers
Shortswords
Swords
Greatswords
Poleswords
Hammers
Greathammers
Axes
Greataxes
Staves
