How to unlock the Thousands of candles achievement in Lords of the Fallen (2014) - Definitive Guide
Defeating the Guardian is tough. He is one of the toughest bosses to defeat in the game.
I found a great video on Youtube to beat this boss without much fuss... it just takes a bit of time.
Run into the arena, and die to get the boss to be spawn in the middle of the arena. Once you are back at the nearest Red Crystal, run up to the arena area, but dont enter. Find the area where you first fought a mage enemy, and in a nearby room you can see into the arena through a barred gate. Equip your Faithful Disciple trinket for faster magic regeneration. You can put a nice rune in the gauntlet to help as long as it doesnt hinder the range of your Gauntlet blasts. The only down-side is reports of it taking 20-30 minutes to kill him on NG+ and NG++. I would estimate it took me 15 minutes on my first playthrough.
Achievement will pop for defeating the boss, plus you will get credit for the bonus of not knocking over any braziers during the fight which will get you the Firewalker shortsword special weapon to count towards My Private Stash.
(All credit to the creative gamer Kerry Miller. Please leave a thumbs up for her when you watch the video!)

Great for getting the boss achievement but cheesing it doesn’t get you no damage achievement.

Can confirm it still works - it took me 62 shots at 64 damage, so he has roughly 4,000 HP

I chose to play this safe. It took a little longer, but got me the kill.
- Dodge his initial fire attack, then dodge his charge attack;
- Run to the centre of the arena;
- Keep him in the centre of the arena and lead him in a circular direction, while being careful not to leave the perimeter of the torches. Roll just as he's about to do his 2 hit move. One roll should be enough if you time it correctly, and can leave enough time to drink a potion if needed;
- Every so often (every 5 - 8 double attacks or so), he'll kneel down to perform a fire attack. When this happens, sprint to him and perform a single jump attack. Don't get greedy, spam roll backwards to avoid his sword attack followed by the fireballs. His double attacks will start again. Rinse and repeat.
I wore full 'Effect' armour, the 'Stance' Kite Shield and 'My Axe'. If you stay in the centre of the arena, you shouldn't need to worry about avoiding the torches for the special weapon.
Good luck!

If you're having trouble on NG+/++, another tip is that you can shield bash every firepot, and it will knock out a decent chunk of his health.
Even tho the pots will light on fire again, this only works once
