I found this pretty easy to achieve, just get behind an opponent and press and hold the Right stick button, and enjoy breaking there neck.

Simply get behind an enemy and press/hold . This must be done in player match.

While in multiplayer, approach a player from behind. If you are in the correct position, a prompt will appear on the screen on the screen to press to stealth kill them. Do this and an animation will play of you breaking their neck. This will get you the trophy. Note: the game can sometimes be a bit awkward in terms of allowing you to undergo the stealth attack, you may be blatantly behind an enemy yet the prompt fails to appear, just keep trying. This should come naturally anyway without you even having to deliberately aim for it.
