In order to play the 8-ball game you must first unlock it. This is done by winning the first race in Single Player > Adventure mode. You have a choice of two (a 3 lap race or an arena event).
One you have won this go back to Single Player > Arcade mode.
8 ball is now unlocked in the first set of game styles (French bar).
Simply knock all the yellow balls into the pockets and avoid potting the back ball. You have no rivals nor teammates to worry about, so this is a simple task.
