In CONVOY CHASE In this level you will be driving a Jeep trying to hit some trucks. There are several road signs along the road.
I found this easiest whilst collecting the monkeys.When the mission starts hang right back and let the lorries get ahead this way the timer doesnt start. Another site said the signs hit were accumulative but this wasnt the case for me. So hang back and hit 50 signs to get the achievement

You can wait until you have collected all the monkeys in the level. Next time you start there will be no timer at all, even if you hit the trucks. Like IINFIIDEL i think you have to hit all 50 signs in one race, they "respawn" after a while so don´t worry if you miss some of them.
