If you initially miss this one, it's kind of a pain to retry, but here's how you do it:
1) Go to Welcome to Africa
2) Choose Alex and go to the cave to the left
3) "The Hidden Cave" will pop up. Choose "Replay Level"
4) Zip your way through the first several goals until you get to the Melman Boulder Roll part
5) Take it VERY slowly. This took me several tries, and I kept falling off at the same part, which is frustrating since it takes a few minutes to be able to retry.
