Warning: Don't get 60 or more of receptions, sacks, or tackles per game or it might glitch out and give you only 1. It happened to me.
It's also important to stick with one guy for receptions. I was a complete noob and it took me 3 or 4 more games than it should have.
It's easy to get this by playing a game in a franchise regular season.
I highly recommend using Quick Pass-Double Slant.
I picked the Carolina Panthers and always passed to Y (Foster from behind) and tried to run out of bounds for 2nd and 1, then 3rd and 1, then 1st down. That way it maximizes receptions per 1st down.
I got most others by simming 30 yrs but this just wouldn't pop. I also have no idea what it means to adjust depth charts
For the noobs like me, to adjust cpu ai, go to the game ai screen with 0 to 100 sliders and hold RT and move right to select between user and cpu ai. I also highly recommend setting offsides to 0.

So if not 60 then how many does it take for it to pop?

I just looked on xbox360achievements.org's achievement guide and it says over 20.

You must get exactly/more than “20” receiving receptions in a franchise/play now game.
TIP: refer to “Season Record – Receive TD”.
