If you want to play the game then turn the settings to Rookie and turn offsides to 0. Just line up in front or behind their quarterback and when they hike the ball sack him. Do it 7 times so that you can unlock this achievement and the 7 sacks with one player achievement. I was able to play two games and unlock all but 4 achievements.
