The other solution here isn't bad, but I would really recommend playing solo instead of online for this achievement. No point in messing with real people online when you can get this just as easily offline. Here are the steps I followed.
1. Go into Draft Champions mode > Solo - Draft Now
2. Draft your team - Be on the lookout for achievements associated with drafting - Great Pick, Draft with Style, and Good on Paper.
The Great Pick achievement in Madden NFL 16 worth 14 pointsDraft a player with an OVR at least 10 points higher than the base team's OVR in Draft Champions.
The Draft with Style achievement in Madden NFL 16 worth 54 pointsBuild a Team style (5 players of a particular team style).
The Good on Paper achievement in Madden NFL 16 worth 98 pointsDraft a team with an OVR greater than 82 in Draft Champions.
If you think you've drafted a great team that you're comfortable with, I'd recommend playing through and going after The Champion achievement which will require you to win 3 consecutive games with your team.
The The Champion achievement in Madden NFL 16 worth 49 pointsComplete a Draft Champions event undefeated.
If not..

4. If you start out on offense, immediately get a safety by running into the back of your own end zone. If defense, select Special Teams > FG Block and let the CPU score
5. Now that you're losing, quit the game. The game will count it as a forefit and you will be able to start over a new draft.
6. Go back to step 1, rinse and repeat until you have your five draft champion events completed.
You could of course just do the 5 DC events legit - if you play MUT, the mode gives some pretty solid rewards for winning. Winning out vs the CPU gives you a Draft Champions badge, around 500 coins, a gold player and some silvers. Losing earlier gives some nice rewards too.
After completing the first draft champions event, the following two achievements will unlock automatically.

I am having trouble with this achievement whether it is a glitch or maybe you are not supposed to switch from H2H and offline draft champions, but I have done way more than 5 draft events. If anyone knows for sure please let me know, thanks.

If you are on Xbox One, check your achievements on the system and it might say 100% but might not off pooped yet. I've had this happen on Halo MCC and it took for a few days for the servers to read it.

To unlock this trophy simply complete five draft events. It does not matter how well your drafts go, just complete five of them. To re-draft without playing an entire draft champions event season simply quit out of the first game. Currently there is a 20 minute wait period after each draft before you can draft again.

From the Main Menu, select Draft Champions Mode. Select Single-Player Draft. Play your first game and once you are in control of your players, pause the game and select Exit Game to forfeit. One you are back to the Draft Champions menu, collect your MUT reward and select Start New Event. Unfortunately, you can only do a draft every 15-minutes. Do this 5-times and the Achievement will unlock.
