UPDATE AS OF 22 JUL 2016: It's my understanding that there was a recent update. If you are looking at this, and notice any differences, please let me know, and I'll update this solution with the new information. I'd check myself, but I don't have the game anymore.
So, this achievement is hit or miss. However, there is a slight trick that can help you get this sooner.
Tip 1: If you look in the top right corner, and you highlight each player, you will see the overall rating go up, down, or stay the same. Simply try to keep going up, and try to get to 83 to have the achievement pop.
Tip 2: Another trick to keep that OVR rating going up is to compare each of the 3 players available for draft to the highest rated player you currently have. For example, if you have a LOLB, QB, and a HB, and there is a 12, 15, and 13 difference between the draftable player and your current best at that position, take the one that is 15 better, which in this case, would be the QB.
TIP 3: Credit to iTzMerKiNSeaSoN for posting his draft, and giving me the idea to try something different.

I didn't get quite as lucky with my draft, but I did pop the achievement, thankfully. I got really lucky in the beginning, bad in the middle, and then HUGE luck in the last 3 or 4 rounds.

If you draft your coach and 15 players, and you aren't at a 83 or better rating, then go into the game, hit the pause button, and quit the game. You'll get a bad player for your MUT team that you'll probably end up quick selling.
Now, wait 20 minutes from the start of your lats draft, and try again, as you are not allowed to draft but every 20 minutes.
AGAIN!!! I CAN NOT STRESS HOW LUCK BASED THIS ACHIEVEMENT IS!!! Everybody I have asked for advice to make this solution better says it's probably 75% to 85% luck based.

I tried every strategy to get this dang achievement. After about 30-40 attempts over three days, this is the draft that won me the achievement.

This was the first draft with 3 90+ players and also the first with the lowest selected being a 79. This is almost entirely luck based. The tips mentioned above are useful so dont ignore them but definitely keep in mind that you do not have very much control. My other tip is try to look at the positions with the lowest 3rd string rating as getting rid of those seems to help bring up the overall even if it didnt move when you hover over the player. I also did not notice any correlation with picking the team style. And a side note is that in one of my drafts my rating did go up when i selected a FB but it didnt on others, i think it doesnt weigh as much on your total as other players.

I've had that problem a few times. I got 82 about 10 times straight, and now I am consistently getting 81 and 80. -_-

Just want to give everyone an update. Draft Champions is now in Season 2, and as a result they updated the base team from silvers to golds, making this almost a guarantee 82+ every draft. I did one draft and got a 84 team. So it is now MUCH easier, if not guaranteed.

To unlock this trophy you will need to draft a team with an overall of at least 83.
The bad news is this trophy is 25% football knowledge and 75% luck. The reason it is luck based is because you are at the mercy of the cards. If you keep being offered position players you have already drafted then your team will not improve enough.
The good news is you have an unlimited amount of attempts to try for this trophy. If you fail to draft an 83 OVR team then simply quit out of your first game and try again. But note that you will not be able to re-draft for 15 minutes.
The best strategy I can give is this:
Try to choose a good coach. I know most times you won’t get that chance, it’s not necessary but it helps a bit if you do. Bad coaches will start your team at 72 OVR, average coaches at 73 OVR, and good coaches at 74 OVR. I’m still compiling a list which coaches belong in which tiers.
Know your coach’s schemes to draft efficiently. i.e. don’t draft two DTs if your coach runs a 3-4 defense; and conversely, don’t draft two MLBs if he runs a 4-3 defense.
Next tip is to never upgrade the same position twice. Your starting roster has 22 spots but you only have 15 rounds to draft players so no matter what seven of you players will suck (71-73 OVR rating) and only significant upgrades at starting positions will raise your teams overall. Having two great players at the same position will absolutely do nothing good for your team. Example: Draft an 87 RE in the 3rd round, don’t go and draft JJ Watt in the 10th round because he’s available. Sure he’s the best RE in the game but drafting him over your already 87 RE is only a +4 and will not help you. This goes for all positions.
Draft highly rated rare positions first. What this means is if there is only one position in your starting lineup, then choose that over positions where there are two. I.e. you only have one starter at QB or RB but two starters at WR or CB. This helps because later in the draft you will pull a deck with high rated players from positions you have already drafted (this will happen). You can double up on corners but not RTs. Get it?
Pray to whatever you deem holy that you don’t get screwed on your packs.
To re-draft without playing an entire draft champions event season simply quit out of the first game.

From the Main Menu, select Draft Champions Mode. Select Single-Player Draft. This is somewhat a luck based achievements because you are only given the option to draft one of three different players per round. Start out by selecting a coach. It does not matter which coach you choose as you will always start out with a level 73 team rating.
I have heard that selecting the best overall player can help you reach a team rating of 82+, but I have also heard drafting players with a team style that of your coach, it too can make your overall rating 82+. This is very much a try and fail achievement. The downside to this achievement is once you draft a team, you must play a game, quickly exit the game to forfeit and re-draft. Unfortunately, you are only allowed to draft once every 15-minutes.
