How to unlock the Turn Down for Watt achievement in Madden NFL 16 - Definitive Guide
I used MicL Bo's idea of making Watt a safety. Download my file called "TURNDOWN." Load it. Start a game against a heavy passing team. (I chose the Ravens.) Pick rookie difficulty, 12 min quarters. Make sure your ballhawk assist is on. When you get the ball, just punt. Every defensive play run GL Man, in the Goal Line formation. The AI will recognize that you're blitzing and they tend to throw more often. This play also makes Watt cover the best receiver more. In the pre-play options hit and guess a pass play with . When they throw to Watt's side, press and hold . I got my achievement before the end of the first quarter.

Thanks sir. I downloaded your file and on the first pass was able to intercept with J.J. Watt. I used 2 controllers.

Sorry if this gets a little long winded but I will try to explain how I got this as detailed as I can. You will need 2 controllers for this method. The long and short of it is that you will be putting Watt in man coverage on a receiver running a screen, and then just stepping in front of him and picking that ball off. Super simple, super quick, no waiting on the CPU to throw that ball at him as a safety. Just a lot of set-up work.
Alright so first thing you want to do is start at the main menu. Scroll over to Customize and go down to Settings. In the Settings menu, you want to choose Settings again. First you want to go into Game Options and turn the Play Clock off. This will help us set everything up pre-play to make this as easy as possible.
Back out of Game Options and go down to Player Skill. Under the Pass Defense settings, put Interceptions and Pass Coverage up to 100. When you go to back out of this menu it will ask you to save your options, you can choose either as they will still apply when we go into our Play Now game. Now back out until we are again at the main menu.
For good measure we are going to go back into Customize and then choose Manage Rosters. Go into Manage Players and using scroll down to the Texans where we are obviously going to edit the man-beast himself, J.J. Watt. Hit then choose Edit Player. Use to scroll over to Rating, where you will want to increase Watt's catch and Man Coverage to 99. Save your settings by hitting and when you try to back out either choose Save or Continue Without Saving as it will continue with the changes you made.
Go into Play Now. I used my controller getting the achievement as the home team and chose the Texans. Move your 2nd controller over to the away side and choose whichever team you would like, mine just happened to be the Giants. To speed things up we want to get the away team the ball first so when you hit to ready up, go to Advanced Settings on the home side and under Coin Toss make your First Choice to Kick. Do the same thing on the away side but make sure you set it to Receive.
Alright. Kick the ball off to your second controller and now were going to put all this work into effect. When the options to pick plays pop up, with your second controller scroll down to Concept then using scroll until you get to Screen Pass then you want to choose FL/SE Screen. I personally chose a play that had the receiver on the right running the screen but I'm sure it doesn't matter. Choose any play you would like with the Texans.
Now since the Play Clock is off you have as much time as you want to set everything up. Hold down and push to view your play art. Go through and control any player that is blitzing. While you have them selected hit to bring up Player Assignment then to drop them into a deep zone. Continue to do this until you have no more players rushing the QB.
Once this is done highlight J.J. Watt, hit then to choose Man Coverage. You then want to choose the receiver who is running the screen, in my case it was the cover boy himself, OBJ, which was option on my screen. Then move Watt over in front of him and we can finally start the play. Keep Watt as the player you are controlling.
Snap the ball with your second controller. You don't have to worry about being sacked since no one will be rushing you, but if you take too long to throw the ball the receiver who is running the screen will break off his route to try and get open. Step in front of the receiver who ran the screen with Watt and then using your second controller lob the ball to that receiver. Switch back to your first controller and hold and hopefully Watt will pick that ball off. Nay-Nay time!
The first time I ran this Watt dropped the ball, but the second play he picked it off and achievement unlocked! Hopefully it doesn't take you too many tries, and even though it is a lot of set-up work, it's the most simple way I could think of to get the achievement.

This is easily the best guide for this achievement. I followed your steps and as an additional trick to make this easier, make J.J. Watt's speed 99, as well as any other other stats you think are going to help.
Also, be sure you have the defenders on the same side as J.J. Watt on the opposite side of the field, so you have J.J. isolated with the one WR so nobody will steal the INT from him, which happened to me many times during the process of getting this achievement. It took me about 15 minutes or so using this technique you posted.

I Set jj on the rolb Position. .because the Most of the Time Flacco throws the Ball to the left side..when you choose GL Man

A little cheesy but I did this by editing the rosters. I turned JJ to a strong safety and boosted all off his attributes to 99. I did it my first game playing with him at SS. It's a lot easier than playing him as a DE. I would recommend playing on rookie with 15 minute quarters that way you can build a big lead and force your opponent into throwing.

This requires two controllers, but I got it within 5 minutes.
1. Edit his speed, acceleration, catch to 99 and place him at CB.
2. Start the game and pick deep routs on Watt's side and have the control on Watt.

This trophy can be unlocked in three ways:
The easiest way is to use two controllers and my rosters which has JJ Watt’s stats fully maxed out (he is on the 49ers here). Play on rookie difficulty. Go to settings and turn up the player skill interceptions up to 100. Now on defense choose field goal block. On offense choose a formation with one wide receiver out wide, choose a pass play. Have the wide receiver run a route you are good at coving and have all other receivers stay in to block. Cover the wide receiver with Watt. As soon as you nap the ball tap the receiver’s button to throw a lob pass. You should be able to easily intercept the pass now. This may take a couple tries to get the timing down. The next easiest method is to boost it with a friend. Have your partner run a wide receiver screen pass while you play as Watt and jump the route. This is a bit harder than the above method because Watt will be unedited and drop a lot of easy interceptions. For visual assistance on the above two methods please see the video below:

The final and least efficient method is to try it vs. the CPU. Make sure you are using an edited maxed out version of Watt. You can choose to change his position to secondary position or linebacker so he is covering routes and not rushing the QB. Now try to intercept a pass. Good luck.
Easiest unlocked using two controllers, but if you don't have two controllers, first go to Customize > Settings > Settings > CPU Skills. From here you want to lower all of the CPU's passing skills.
Now go to Play Now, select the Houston Texans and play against any lower rated team such as the Oakland Raiders or the Tennessee Titans. Once you are in the game on defense, press until you are in control of J.J. Watt. Wait for the CPU offense to pass the ball, get close to the receiver and press to attempt a user-pick. You cannot unlock this if the CPU intercepts the ball.
