Here's how I did it and you don't need to download a special roster:
1: Create your Franchise (can be online or offline) with any team.
2: Set difficulty to All-Madden and make sure the CPU does all the roster moves.
3: Turn off coach settings as well.
4: Now change role- Coach, new coach, pick the style you want, accept & continue.
5: Sim the preseason.
6: Go to league schedules and press
to do force win. Select home if your team is playing at home (vs.) and away if your team is on the road (@). Do this for all your games.
7: Do the same for each playoff game/Super Bowl).
8: Sim offseason letting the CPU do the work
9: Rinse and repeat steps 5-8 until you have all the achievements.

Super easy to do.
Start a new franchise. Pick whatever team you want, and for role chose owner, and create new owner.
Now from the three choices of what kind of owner you want to be, chose former player, and you get 500 legacy score.
As soon as you load into the franchise mode, the trophy should pop.
