Start up a new game on Rookie difficulty. I found it easiest to get a ball carrier move icon to pop up if I run HB Power O after hitting the hole a defender or two is within range for a spin or stiff arm popup icon. Mine unlocked when I was tackled head on and won the "first to hit the A button wins" mini game.

Is it possible that Ultimate Team matches don't count for this?

This trophy is essentially unmissable as the computer will perform all ball carrier special moves for you when you begin playing the game. All this trophy is asking you to do is to spin, juke, stiff arm, hurdle, or truck a defender. Even with auto-moves off you will unlock this trophy without even trying.

Should come naturally with playing. When you're about to be tackled, often times a quick time prompt will show up and you have to hit the corresponding button. I did it accidentally in my first game.
