This is... so much easier than it really should be. Maybe it's because the season is now finished.
Start Franchise. Cloud, Real-Life NFL Roster.
**Here's the key part.** When you pick your week. scroll allll the way to the right.
Yes, you can start your franchise in the Super Bowl to pop this achievement.
Pick either the Chiefs or the Buccaneers. I played the Chiefs, but the ratings are almost the same. Then win the game. I played offense-only for the first half, went up by 35 (yes, I was on Rookie), then just simmed to the end of the game.
The achievement doesn't pop until you're back at your desk after the game. It was a little delayed for me, but it definitely worked by basically only playing about 1/4 of a game. Like I said, I don't know if this is new since the Super Bowl is over (and we know who the teams were), but it just worked for me.

I got this without anybody else’s being in the league. I started a cloud franchise with the saints because they have one of the highest rated team. Then sim week by week to make sure I made the Super Bowl. Then just played the kick off in the Super Bowl and then sim the rest of the game. Got the achievement when back in the franchise menu.
