How to unlock the The Fortress achievement in Madden NFL 23 - Definitive Guide
Max level is level 30. Start up Face of the Franchise at the LB position. Play on Rookie, 2 min quarters. Choose a team that will pay you 240 Rep per game. 220 if you have to settle but there were 3 teams that were offering me 240. The point is to join a team that will give you the max Rep per game.
After the Preseason be sure to pick a season goal of Sacks and choose the highest number possible, the "Aggressive" setting. Every week, choose a weekly goal that gives the most rep that you think you can actually attain. In short games, 8+ tackles is almost definitely not happening, so it's better to fall back to a 100 rep goal that you'll actually complete. But if you do fail your weekly goal it's not that big of a deal.
When choosing side activities, always choose the ones that give you Rep or Cred, and stat boosts if those aren't available. Don't bother with any that make you do actual practices though, as the time spent is not worth it.
During games, find a play that lets you have a wide open run at the QB most of the time. For me, that play was Nickel Wide, Over Storm Brave. First play of each game I'd go to Formation Nickel, to Wide, and select Over Storm Brave. Then I'd use the Recent Plays selection to keep picking it for the entire game. If that play isn't in your team's playbook, look for any play where lots of people are blitzing, meaning they are arrows running toward the quarterback. Overloading the offensive line so someone can break free is the key.
As you're rushing the QB, experiment with pressing the Right Stick in various directions to get past any blockers that stop you. You should easily be able to get 1-3 sacks every game doing this and hit your season goal easily. Those points come at the end of the season and are small in the overall scheme of things but it adds up.
As you level up, spend your points on things that will improve your pass rushing and ability to break through blockers.
Other than these things, it's just a matter of playing a lot of games. It is a slow grind. I got the achievement a few games into my 4th season.

I have been using this guide on my Xbox One play through and its pretty helpful, I have a couple notes however.
You do not need to earn Cred. This is used for buying clothing and other items in The Yard. I usually will opt for the +1 stamina if I have only Cred options.
I am really struggling to get sacks, even playing as a bruiser (6'5" and 310 lbs???!!) but I found using a 3-4 playbook helps, and you can change playbooks before every game in the Advanced Settings. There are plays that have 5 people crowding the line, so you can be the unblocked defender. Because you have to rush the inside, the spin is pretty useless so I end up using the Bull Rush and Rip.
I also stopped doing practices, and since then have not had my position changed to Quarterback.

Yea, all about finding a play that works for you. I stayed with the default build so maybe being so large and 300 lbs is hurting your mobility? Either way it's not like past Maddens where you could cheese penalties and rack up 20 sacks in a game easily. This year's game is a lot more realistic and much harder to rack up stats. Either way I don't think the difference between 1-3 sacks and 5-6 per game will make all that much difference. It's still a very long grind that will take 3+ seasons anyway.

The Linebacker will take about 3-5 seasons depending how unlucky you are.
General Tips
-Always sim training to save time and push for rep and cred
-Focus upgrades right away on tackle oriented stats then cover last
-Focus perk abilities towards hard hitting and forcing fumbles
-Set weekly goals to the highest you feel you can hit
-Set Season goals to the highest sack total
-During games pick Nickel formation, Over Storm Brave. This will be your goto play. It gives you the best shot at the QB
Winning the superbowl, winning awards, and breaking records will help your climb but it will still be a slow one.
Backup your save after every season just in case things glitch
