I did this with the NY Giants and Saquon Barkley in Franchise, but you can do it with any 90+ player who is in the final year of their contract. Sim to week three of the regular season and a new option that says "Players Ready to Negotiate" will pop up on your Franchise menu. Select it and highlight the 90+ player.
Select "Start Negotiations".
There are then four starting points for contract negotiations: "Team Friendly (high risk), Neutral (medium risk), Player Friendly (low risk), and Very Player Friendly (very low risk)". The risk is in regard to them accepting or not, but you can re-negotiate the following week as long as you're in the ballpark of what they're looking for. You can also do custom and use these as starting points.
I ended up giving custom terms to Saquon of 4 years/$10.5 million a year/$5 million signing bonus and he accepted it (length of contract is a big deal for him).
