This can be done with two controllers (to prevent the QB from throwing the ball)
I prefer to do this from the DT position as it is the quickest path to the QB so you can beat your AI edges to the punch if they break free as well.
Utilize a team with a good DT pass rusher (Eagles, Rams (move Donald to DT), Browns (move Garrett to DT) and face a team with a bad interior OL (Giants, Commanders, Panthers)
For the team being sacked just select any standard play action pass play that DOESN'T have the RB blocking (E.G. in the Panthers playbook go to Singleback Ace formation and use the PA Flood play). The reason I suggest Play Action is that the interior OL struggle to block against user pass rushers on these plays.
We are first going to utilise a swim move
, then a bull rush 
and finally a rip 
. After each successful pass rush move just run towards the QB and hold 
. This is the safest tackle and reduces the chance of the QB shedding the sack.
After you have 3 the achievement will pop immediately so you don't need to play out the game. For this reason I don't find it necessary to mess with the quarter length. However if you are struggling you can make the quarters longer to give yourself time.
I got this naturally while playing franchise mode but if you are having difficulty you can also go to the gameplay sliders and reduce the OL Pass and Run Blocking.
Remember, whenever you get on offense just punt the ball away. We are here to sack QBs!
