The easiest way to do this is to use the Panthers (or, at least the Panthers playbook). In the Pistol formation, go to the Full Panther subset. There are a bunch of option plays in here.
Play on Rookie against a bad team. The easiest way to score is to get down near the goal line, then run a play like Triple Option. After you snap, holding A hands the ball off to the running back straight up the middle. If you don't think you can score like that, bounce outside and either keep it as the QB or pitch it to the trailing running back by hitting LB.
No matter which player scores, you'll get the achievement. It will pop instantly.

Thanks for the added tip. Pretty straight fwd achievement but I did use the hey no brainer reminder giving it thumbs up ;)
