I got this achievement with Adrian Peterson, playing against the Cleveland Browns, on a play where I ran a sweep to the right.
Play on a low difficulty if you need to, and run past the defensive linemen. When a defender comes up to tackle you, hold down LT to enable "Precision Running" mode, then hold A when you get close to a defender to stiff arm them to the ground.
The achievement will pop instantly.

Great solution! I did it with AP as you suggested and used the stiff arm as the CB was in front of me. I think you can do it no matter the direction they are coming from. Just make sure it's one on one. +1

I was Frank Gore. I got Unstoppable and BARELY got College Influence. No matter how many times I stiff armed an opponent, nothing. Obviously, I was playing a regular game and met the requirements for the achievement.
