Very Simple. Use a second controller. On their first play, do a handoff and run the RB out the back of the endzone.

Start a game using "Play Now" and leave the settings as is. As the description states, force a safety. The achievement will unlock once you meet the requirements. You do not have to complete a full game.
Two Controller Method:
As controller one (main profile,) have your team on defense. Select a play, hike the ball with the second controller and run back into the endzone. With controller one, run the defender to the other player and tackle them in the endzone and the achievement is yours.
