From what I could recall there was 8 traps in the game, there were a few others that I don't think counted as a trap, I've listed below what they should be. They can only be encountered in classic, chaos or custom mode. I did all this in Chaos, no ai with a second controller.
The 8 traps SHOULD be:
Bumper moving left to right
Bumper not moving
Crusher, goes up and down
Swinging Hammer, from left to right
Tesla Coil not moving
Tesla Coil moving left to right
Barrier that Rises up and down from the ground
Barrier not moving
You will get the option to select these from when you are given track pieces.
I made my second controller drive into these but the tracking seemed buggy, both driving into it and hitting my second account into it lead to mixed results, just go with both. Make sure you drive to the end and finish the 'lap' once they hit the trap.
It is also possible to get any type of trap on the first go, so you could just load up a map, not see the trap you want, go back to main menu and repeat.

So I finally unlocked this after it being stuck for many games. Your list is correct, however I think the traps only count if you specifically place them and then an opponent hits them. The final one I needed was the bumper moving back n forth which I had encountered and even crashed into in several games prior, however the achievement did not pop until I physically placed this trap onto the track.
So in order to grind this out, I recommend doing a local custom game - no weapons and set hazards to Placed. Then just be on the look out for the traps you need and try to grab them before the bots do.
