You unlock the Apex Sperm Whale fight by completing all the side missions in The Gulf area of Maneater. It's the final Apex boss, and the most powerful at a level 50.

Sperm whale apex is level 60 as of the newest update. Just and FYI

The sperm whale is guarded by killer whales, which swim faster than it. Be careful when avoiding killer whales - if you swim too far from the main target, the sperm whale will heal
