There's an easy way to do all gold medals in a game. I stumbled upon a glitch randomly but it works almost every time.
--LONG VERSION--
What you have to do is to start a trial on any of the levels (DLC level works too), play the level normally (you don't need to hurry) and at end of the level, when you see a fruit, you have to barely touch it, press the
button on your gamepad and click on "Restart" (you have to do this before you see eating the fruit animation). After the black screen and the countdown (3,2,1) the level will finish instantly and you will get a result screen with a 00'00'700 time, gold medal and achievement (for example, "Faster Than Light" for completing Running Down That Hill under 2'10'00).
--SHORT VERSION--
1. Pick any trial and go on until you see a fruit.
2. As soon as you touch the fruit, press button on a gamepad and pick "Restart".
3. After 3sec countdown you will get a gold medal with 00'00'700 time.

I'm glad to know that there is a glitch way to do this , the game is good , but i dont wanna waste time getting all gold medals , even If its not so bad and hard like Crash 4 or any other platformer. Will try this on next days and come back to tell if it works for me , thank you!

It works, but I'm not going to do it, the window of time to hit it is very small, I'm not going to play a level of 4 or 5 minutes and in the end I might not hit the glitch and then have to play again. Thanks for the guide, for those who are going to try it really works!
