EVERY fight gives you experience: Versus, arcade, campaign, even the opening tutorial. The highest I've ever gotten in one fight was 5000 XP, but your average fight will probably net you 2-3K. Just keep slogging through, and this will pop.
It might seem easiest to do this on versus with no opponent, but I consistently got way more points actually fighting the computer, so i would recommend that for speed's sake.
