To block, you simply hold back or down+back (meaning the direction away from your opponent).
Most of the time the crouching-block will be your best option, so I recommend going into medium Arcade and holding
until you've blocked about 20ish hits, then finishing the match, win or lose (assuming your character is on the left side, facing right, which is default).
At the end of the match where you have successfully blocked your 100th attack, this achievement will pop.

In order to unlock this trophy, you will need to block attacks at least 100 times normally. You can block attacks by pressing 
or 
on the d-pad or left analog stick depending on the direction you are facing. For some attacks, blocking them could cause chip damage (which take up a small fraction of your health while guarding) being dealt against you.
