How to unlock the Incineration Specialist achievement in Mass Effect Legendary Edition - Definitive Guide
To get this you need to destroy the armor of 25 enemies using the Incinerate ability. Basically you (or a squadmate) needs to cast Incinerate on a enemy with armor (orange bar over their health indicator/their health indicator in some cases) and successfully destroy the armor (deplete that bar) - it does not count if you merely damage the armor but do not fully deplete it. Incinerator ammo does NOT count.
On easier difficulties an Incinerate will destroy most enemy armor in one hit, but if you're playing on Insanity you will want to whittle the armor down to about 25% through other means before casting Incinerate.
You don't need to do it with your own character, you can direct a squadmate to do it - in this case the easiest squadmate to use is Mordin, as he has Incinerate and is one of the first companions you can recruit on Omega. The only other character who can learn Incinerate is Shepard him/herself if made an Engineer or an Infiltrator.
The enemies that most often have armor are various mechs and tougher Collectors. On higher difficulties (Hardcore and Insanity), many Collector Husks will have them too.
There are more than enough enemies with Armor throughout the game so that you don't have to resort to any workarounds, but if for some reason you don't want to keep bringing along a squadmate with Incinerate, you can also find a group of enemies that have Armor (e.g. the Collectors Husk the first time you encounter them on Horizon, if playing on higher difficulties), destroy the armor using Incinerate, reload the save, and repeat until you have 25.

A good place to get this out of the way is on the Recruit the Warlord mission. Right after the lab Krogan opens a path for you make a save then you fight about 10 Krogan with armor in groups of 2, just kill them then reload.

I suppose Incendiary rounds don't work for this. I've taken off the orange armor off several krogans and I still haven't made any progress towards this achievement in the early going.

For those running through Insanity or those just looking for a place for easy kills on higher difficulties.
When you reach Illium head to the Baria Frontiers store and purchase the 'Minos Wasteland' Star Chart. The store can be found in the taxi port past the police station.
From here head to: Minos Wasteland > Fortis > Aequitas. upon scanning the planet and finding the anomaly you will be able to begin the mission N7: Abandoned Mine
The mine has 50+ Husks, all of which have very low armour. Load out with Mordin, an Infiltrator/Engineer Shepard, or both. Create a save before entering the mine, then proceed through the mine as normal. Use the Incinerate ability as you progress to burn the armour off the enemies.
I was able to do 25 on Insanity without having to reload, if you make your way through and didn't reach 25, simply reload the save you made before entering and repeat. Progress is not tied to save/load game, so reload as many times as needed.
Note: Husks may only have an armour value on higher difficulties. I tested on Insanity and all Husks has armour, Hardcore will likely be similar. I have not tested lower difficulties.

I forgot to get the last few before completing the game, and rather than worry about it on an Insanity run, I tried this after completing the suicide mission. Pushing the difficulty to Hardcore gave about half the husks armor, which was more than enough to finish it with Mordin with a fully upgraded Incinerate. Thumbs up.

Mordin will be your friend for this achievement if you don't have it on your created character. Use his Incinerate ability to strip away the last of any yellow armor bar to get credit toward this achievement. Husk enemies are great for this as an upgraded Incinerate will usually strip away their entire bar in one shot since they have low health. The mission "N7: Abandoned Mine" has a ton of them. Save before enterine the mine and kill everyone, then reload if you didn't get it to repeat the process.
