In the Mech Bay, press Y to modify any mech, select "Edit Loadout," and press Y again to access OmniPod sets. Each costs a small amount of 'Mech XP but it's less than you get for running any mission once.
(Also worth noting that OmniPod sets give you access to different hardpoints as well.)
