You are required to kill at least one of each species of animal within the game in order to unlock this achievement. There are 3 categories of animals ranging from mammals to birds and fish. You are only required to kill one of each of the mammals. Please note that killing any animals with traps will not contribute to this achievement. I have provided a list of each species that can be used for reference.
