Probably the easiest of the skills to max, survival experience is granted when you pick up sticks, stones, mushrooms, etc. Just run around and collect the resources you see.
One way to make this easier is to get the Survival Sense skill. You'll unlock this once you've put at least 1 skill point into the survival skill tree. Once it's unlocked, entering Inspection Mode (Hold Left Alt) will highlight nearby sticks, stones, plants, and more.
Adjusting your game settings to give you increased XP will go help speed this up considerably.
