You unlock this character in roguelike mode by beating the main campaign.
However, he's much easier to unlock in the roguelite mode. Just like the other characters, he can be unlocked by random chance during any of your runs. You can do just start and instantly quit 5 runs in roguelite mode with him to unlock the achievement.
