Chaper R-01 is fairly easy to get the achievement however once you have finished the game you should have roughly 5-7 Hammerhead destroys. So you could instead load up the boss fight against Sundowner (R-05 I believe) because you can destroy 3-5 during his fight alone. Just destroy the Hammerhead as it comes up then run around him and wait for a short time and another will come to replace it.
