If you want to speed this up get a bunch of animal meat and canteens full of clean water and make a ton of soup/stew (canteens make 2 portions per meat). Then just alternate sleeping and eating until you run low on food. Each "clear zone" on the map has animal spawns (but they seem to spawn based on play time or real time). Also you can try talking to base crew members after sleeping to refresh their side missions (sometimes they have you hunt an animal that the side quest generates).

The trophy is cumulative! I died several times (10 - 15 times exactly!) and the “lived days” counter on the iDroid was reset. The trophy dropped when I had 59 days shown, i.e. it doesn't matter whether you died or not.
