How to unlock the Fisherman achievement in Metro Exodus - Definitive Guide

A very easy, but very missable achievement is for killing the catfish during the Volga level. You will eventually reach the train car terminal area, and crawl through a radioactive pipe, as the catfish eats mutants in front of you. Here, you can open the large door and then leave the area, but before doing so, go across the tracks in the side room to find three hanging bodies. Upon dropping them in the water, the catfish will come to eat them. Time it so that you pull the lever on the left side as the catfish is swimming up to eat the bodies in order to unlock the achievement.

man I missed this achievement I did first two but I didn't press button to kill it fast enough. Is it possible to do level select once I beat the game?

The achievement is located on the 'Volga' level in the terminal section (Part of the story and unmissable. If the door locked in the water, make story pogress)
At the end of this section and before you open the door and leave the area go in the small room where the lever is.
1. Ring the Bell
2. Cut off the bodies
3. Use immediately the lever

In this video guide I will show you how to kill the Catfish. This will be at the very end of the terminal BEFORE you take the trolley outside. So make sure not to open the door and go into the room next to it and the trolley to find a bell. Just ring the bell and wait for the Catfish to get close enough and hit the button to the left to drop pipes on it for the achievement.

This achievement can be unlocked towards the end of the Volga level when you have to acquire a rail car from a factory at the eastern part of the map. While in this factory you will be navigating walkways above and around water that will occasionally reveal a giant Catfish but it cannot yet be killed. You must get to the end of the level where the rail car is and in a small room there will be the set up required to kill the Catfish.

As you look out into the water there will be on your right a bell that can be rung to attract the Catfish. Then when it appears, you need to cut the three ropes in the middle that each hold a body or 'bait' for the Catfish, dropping them into the water. When it is feasting, cut the final rope on the left had side to drop the twisted steel girders and debris into the water to deal the killing blow. You may need to approach the edge of the altar in front to trigger the death animation if you happen to be standing too far back.

Attention - Although not missable, you will have to use Chapter select and replay a fair chunk to get to this stage.

Near the end of Chapter 3: VOLGA, before taking the trolley, to the left in a small alcove (which has loads of offerings and signs from the fish worshippers) there is a bell and a lever. You must ring the bell to attract the catfish over and then use the lever to the left to kill it.

Performed at the VOLGA level.
The catfish cannot be killed until you are at the train station. Make your way through this entire area and reach a huge red door. There will be stairs nearby and a gray door leading to the side. You should go there. Now you need to create a catfish trap. All the objects you can interact with are on the right as you go down the stairs. Be careful because the giant fish really wants to eat you. Ring the bell (right) to summon a catfish. After the evil fish appears, cut the string to drop the body into the water. This way you will delay the monster while it devours its prey. Once it starts feeding on the fallen body, pull the lever on the left to drop debris on the catfish. After the debris has fallen, move closer to trigger a cutscene killing the catfish. After the death of the fish you will receive a fisherman's trophy.

In the walkthrough I killed a catfish and walked across a bridge in stealth, the “Prince” achievement dropped

Killing Soma does not in any way affect the events that may happen to the Prince

Everything is easy and simple, the bell rings, we wait for 10 seconds, then it throws off the bait, we wait until it goes to it, and as soon as it starts to eat, we press the levers on the left.

When you are at the railway station looking for a handcar. There will be a room at the end of the level to the right of the gate to the street. There, first we pull the bell, then we throw the victims, cutting the ropes, and then we press the lever as soon as the creature swims up. Watch the cutscene and you're done.
