Just to get the question out of the way up front: Nastya's teddy, found on Volga, does not count as the teddy bear mentioned in the achievement text. After picking up Nastya's teddy, the achievement tracker did not increase.

Just below the level where the hermit is sitting, you'll come across a shelf with a number of items including a tape recorder. If you're looking at the tape recorder and turn right, you'll spot the sun dangling from a shelf.
Bear - On TAIGA, near the beginning of the level, you find a schoolhouse. If you get to the broken bridge where the group of guys drop out of a tree and address you, you've just passed it.
After entering the schoolhouse, turn right and go through the open doorway into the next room. The toy will be in the left-hand side of the room dangling from the window frame just above an actual teddy bear like Nastya's [Thanks to Ix x LEMON x xI for providing this early location].

I like the addition of some collectibles

+1. Quick note; if you're playing this on Iron Mode and trying to do this all in one go, be aware that as per the other collectibles you DON'T need to re-pick them up when you die. I died right at the end of Volga, had to restart the whole thing, and the collectible was permanently picked up (wasn't even there anymore). Also be aware that there is tracking, which helps.

This achievement can only be unlocked while playing on New Game + so should be done in conjunction with "Mutation" and "Iron Mode". The three items in question are visible in a normal playthrough however they can't be interacted with. The pictures below will detail their location and the level they can be collected on;
Fish - The Volga. The Fish can be found in the final room of the mission where you collect the trolley that is used to move the rail car, in the same room where you kill the Catfish. The fish will be hanging from the hook in the picture below:
Sun - The Caspian. The Sun can be found in a room inside a ship that houses a friendly NPC. You are unlikely to explore this area on your own since it is out of the way from all of the main missions in this level, however you can run straight to it after gaining control of your character. Make your way into the ship from the broken half way point, then through the dark room full of spiders and up a ladder., through a door in front and turn right to find it on a shelf. The location of the ship in question:
