How to unlock the Look Ma, No Hands! achievement in Microsoft Flight Simulator - Definitive Guide
Update 9 has supposedly fixed this achievement, but over the past year or two this may have become a bit more glitchy.
You need to use an aircraft with Autopilot and toggle it on using Z on a keyboard or on an Xbox controller. Using the AI Pilot (in cursor mode or otherwise) will not count towards this achievement.
For quickest results, several users recommend using the F-18 Hornet, as it might be the only plane currently counting toward the achievement. I used the Citation CJ4 at the time. Either way, start at a random point on the map so you don't have to worry about taking off and ascent and give yourself a destination over 600NM away. Activate autopilot and doublecheck in cockpit view (on the Citation it's the AP button towards the right side of the top panel below the window), and check back in about an hour.
I found that using Sim Rate will cause progress not to count towards the achievement.

There’s still a bug in that doing this on a Load Game DOES NOT count.

Tracked right up to 92% and stuck there. Just stopped making progress during the same flight, nothing else changed. Cool.
