For this you need to collect 50 of each item - cherries, bells and gold bars.
The amount you get increases with bet amount - on 20 coins you get one, 40 you get 2, 200 coins you get 8 etc
The likelyhood of them appearing seems to increase with bet amount as well (at least it has in my game), so waiting until you can bet 200 a spin if you're wanting to grind this out would be easiest - although this will come slowly through normal gameplay.

I got this achievement today. However, I have not finished collecting a full set of gold bars (I currently have 27). The achievement unlocked after I had completed 2 cherry sets and 1 bell set. So unless there was some kind of glitch for me, completing the same set twice will count towards the achievement.

I have completed 2 cherries (its now working towards 250) and 1 bell (now working towards 100) and this did not pop for me.

As the player gambles coins, special collection icons (Cherry / Bell / Triple Bar) will be randomly be revealed on the final reel in gold. Once all three collections has reached level two, (i.e. finding 50 of each) this achievement will unlock.
