The other solution is great and detailed but the easiest way to execute a Caragoth is simply once you’re mounted on one just hold and press button (at least in my case is counted as execution of Caragoth).

What you want to do is mount a Caragath and then find a relatively large group of enemies to attack. Dismount and fight them and get you chain up to 5. Now simply execute your tamed Caragath for the achievement.

One option of doing this is when you face the Warchief named Asgam Smuggler. get your hit-streak up until you have an execution then execute one of the Caragaths his captains are riding.
To get the trophy "I Had To Put HIm Down", you need to kill a Caragath with an Execution.
There are two ways you can get the trophy.
-If there's a Caragath nearby with multiple Uruks surrounding it, fight the Uruks until you get a 5 or 8-hit streak going (preferably 5-hit streak), then make sure you're facing the Caragath and hitting both the Circle and Triangle butotns at the same time. If done correctly, Talion should rush towards the beast and slay him with an Execution.
-The other method, which is what I used to kill the beast more quickly, is to mount the beast first. You can do that by either jumping on it from above and doing the control prompt to tame the beast or you can aim with your bow and use the move "Shadow Mount" to instantly get on top of the beast and tame it. Once that's done, all you have to do is hold down R2 and then press Circle. I don't think you need to get a five-hit streak going for this one at all, just hold down R2 and press Circle. Talion should instantly kill the beast and the trophy is unlocked.

This can be done as soon as you start the Lord of the Hunt DLC. Follow Torvin’s instructions and shadow mount the Caragath ahead, then once mounted hold RT and press B to execute the Caragath and the achievement will unlock. You’ll fail the mission but by hitting retry you’ll be put right back to before shadow mounting.
This can be obtained at any time during your playthrough. In fact, despite the achievement’s description here, you don’t actually need to perform an execution on a Caragath to kill the creature. Instead, simply shadow mount a Caragath while traveling through Nurn and then perform a “Mount Kill” by holding the right trigger and tapping immediately.
