I highly recommend saving your nitros in the first race. An occasional burst along the backstretch is OK if you're running too close for comfort, but hang onto them otherwise. With the prize money, I'd get acceleration.
Same goes for the second race, though you've got a bit more need at times because the AI is a lot faster. With the prize money, I'd go for top speed, and tires if you have enough. All remaining cash goes to nitros.
The third track should be cake if you saved your nitros. You can blow through the last lap, practically guaranteeing success. I had 20 going into the race myself, and burned half of them on the last lap.
One other pointer: Don't go after money or nitros on the track if they're in the corners, out of the usual driving path-unless you have enough of a lead or are confident enough in your skills.
Super Off-Road is definitely the easiest of the 3 racing trophies. And just like the others, I found it easiest to use the D-Pad as opposed to the joysticks.
You only need to win 3 races in a row to grab this trophy, but, unlike the "Sprint" games, the AI is dumb even in the 3rd race. Just drive your truck like you stole it, avoiding water and walls, using your nitro boost when you need it on straightaways mostly. Grab money if you can because you can upgrade between races. I just got Accel upgrades each time and spent the leftover money on Nitro. Really, it shouldn't give you much issue once you have a feel for the turning controls. After your 3rd win in a row, the silver is yours.
This one is fairly Easy, the first two races start off simple much like Sprint and super sprint and then get harder on the third race.
For the first race don't use boost at all and try to get as many item pick ups as possible, spend cash on accelerate and engine, if you have the cash buy some boosts.
For the second race, same concept if a boost is absolutely necessary go ahead but save them for stretches and don't use more than three. same buying strategy.
I entered into the last race with about 40 boosts and got 1st place by about a half a lap. save boosts for stretches and keep corners tight while prioritizing control.
It may take a few tries but you'll get this one fairly easily.
