Start a new game in Survival mode, and ensure the game difficulty is on either Normal or Easy. Peaceful turns mobs off.
Wait until night time and the enemy mobs will appear - simply kill a spider, creeper, skeleton or zombie with a wooden or stone sword and the achievement will unlock!
You can also import your saves from the Xbox One version and gain other achievements along the way. Another useful trick is to go to the X1 version, load up and save a Tutorial world, and import it to the new beta.

I got this achievement in a peaceful world by killing a Piglin, so if you are in peaceful, try that.

To Unlock This Achievement, Make A Survival World With A Bonus Chest.
Now, You Have To Be Prepared For The Night, So If The Bonus Chest Doesn’t Have A Wooden Axe, Or Any Axe, Then Find A Tree And Get Some Wood.
When You Are Done, Find A Little Cave And Start Mining Stone.
When You Have About 30 Blocks Of Stone, Then If You Have 4 Oak Planks, Make A Crafting Table And A Stone Sword. If It’s Almost Night, Then Don’t Get Any Armor.
Then, A Zombie Should Show Up. Then Kill About 5 Mobs, Then You Will Get The Achievement A Little Bit Later.
EDIT: 3 years later, I think you should kill 5-10 mobs, due to the fact that a reply killed around 8, and still didn't get it.

holy cow, i made this so long ago. I've read over your response, and back then I didn't notice this, but I'm pretty sure you unlock the achievement after killing a couple of mobs.

I did this. You have to wait about 8 minutes for full sunset for monsters to appear. I killed spiders and a zombie with a wooden axe and pickaxe from the bonus chest, and even punched a zombie to death - got nothing. Either the bonus chest counts as a cheat code, or the game is just broken.
...So, I started a standard survival map (changed to Easy), had no clue how to make anything other than the crafting table and useless materials, found a cave and got some stone, but had no recipe for weapons! By then it was dark, punched some creepers but they self destruct and kill you - lost all my stuff - so went into the cave and punched some spiders and a zombie dude and got the achi (possibly due to an exploding creeper helping?).
I am shocked how bad this 'most sold entertainment item in history' is - not as good as GTAV.
