How to unlock the Life Of The Party achievement in Minecraft Dungeons - Definitive Guide
This can be done with 2 controllers, and can be farmed fairly easily on the mission "Redstone Mines". This mission has minecarts which run along tracks throughout the level, and if they hit a player they hurt, alot. Up the difficulty to the highest you can, and walk the two players to the nearest track (you should come across one before you meet any monsters). From here, just have player two stand on the track, get hit to go down, and then player one revives. Rinse and repeat until you have the achievement.

Just to add to the solution: if anyone has problems with the achievement tracker not going up, instead of joining with the 2nd controller while in the game, do it from the main menu.

I’m playing it online, and the tracker doesn’t move at all.

This can be done with a second Controller. I can confirm this works. Did the Achievement 5 Minutes ago.
The game does not have online matchmaking, so you will need to play with invited friends (up to 3 others) or couch coop with two or more controllers. If you are playing this game regularly with others through all three difficulties, you should get this through natural play.
There is also a large hill on the Pumpkin Pastures level, where you and your friend can run off the hill and take fall damage until they go down. Revive them and repeat grinding for the achievement.

As Toronai put in his solution, you can do this with 2 controllers and let the mine carts hit the guest and revive them. But you have to wait for mine carts to come which, while fairly quick, is still slower than placing the guest in front of an archer.
I was doing the mine cart method with a guest account on my main character’s apocalypse play through so it was one hit and down for the guest. I noticed 2 archers just past the doorway so I moved the guest to stand in the doorway. It took one or two arrows to knock the guest down and I stood next to the doorway reviving him. As soon as I got the guest up he got knocked right back down without having to wait for the next mine cart.
Both methods work so it’s up to you how quickly you want to finish.

So to add my 2 cents in:
I used Desert Temple map, as I could wander through the mobs with my main easy enough, getting a few revives along the way. Until we got one of the traps, either a crush door or blade, which are a lot quicker than the mine carts, 1 hitting the dummy every couple of seconds.
One very specific thing to wait for, as commented by Kranium Krushur in another solution: wait for it to come up "revive your friend" on screen or it doesn't count.
Definitely worth putting the tracker on screen to check its triggering properly

If there are 2 controllers, then you can beat one in local co-op.

Attention! It’s better to add a friend in the main menu; if you add it after the world has loaded, it won’t drop out!
