How to unlock the Diamonds to you! achievement in Minecraft: Edition - Definitive Guide
If you have a second controller and no other players available, this can easily be done on your own in the tutorial world.
Load up the tutorial world. Once you're in, connect the second controller, press the menu button and enter as a guest (or any other account you have available on your console). Walk up the stairs and take the iron pickaxe out of the chest in the room with the Enchantment table. Once you have it, take out your map and walk towards X: 9, Z: -34.
(Thanks to MTP Toby, he recommended these coordinates in his solution for 'Enchanter'.)
Dig straight down until you find the diamonds. Once you've mined them, make your way back up by using the cobblestone you've collected.
Now just make your way back to where you left the second player, throw some diamonds at them and you should be done.

For anyone having problems with this: I could only unlock this achievement while I was in another person's world. I had to load up a world with my second controller and join it with my main account to actually get the achievement.

The other solutions say that you need to be online/have another controller, but there is a way to do this in singleplayer (no online/other controller). Some zombies can pick up items, not all of them. So all you need to do is throw a diamond at a zombie. If he doesn't pick it up, then try again with another zombie. Once a zombie picks up the diamond you will get the achievement and you can kill the zombie. He will always drop the diamond, so don't worry about losing it.
So I went about tackling this a different way, as the coords I used ended up with me in lava.
Started a tutorial game, hit "yeah i know how to play" made an iron pick, and just griefed the diamond blocks making up the (fake!) beacon, put those into the old school building interface and got diamonds and then brought in a guest player with a second controller and threw diamonds at them and poof, achievement unlocked.

Diamonds are found in caves or deep inside the world. Find a piece and simply throw it at another player, make sure the player collects the diamond though.
