When you enter the Nether you'll see large white cat octopus' floating around. These are Ghasts and they will shoot fireballs at you, simply time your sword hit so you bounce it back, with a little practice and timing you'll eventually hit one with it for the kill.
Edit: r3volv3r789 pointed out in the comments it can also be done with a bow and arrow which may be easier to time than a sword hit

Its much easier with the bow and arrow

Building off of the bow and arrow technique, I'd highly recommend the tutorial world for this one. There's already a Nether portal built for you near the castle dormitory and you get an enchanted bow and a set of 20 arrows from the chest at the top of the stairs, near the starting area. The potion lab nearby has all the ingredients for 15 Fire Resistance potions and with a little mining you can easily get enough flint to make more arrows from the feathers of the chickens kept in the farm.
It's really easy to gather all the supplies and once you're ready you just need a decent spawn of a Ghast in the Nether and you're all set. Make sure to turn off auto-saving before you enter the Nether - you don't want to waste your arrows and have to make a bunch from scratch.

I would suggest using a bow and firing an arrow to get this achievement.
Although you can use a sword, I always found the timing a real pain, you get a little bit more leeway with the bow and arrow, but it still took many arrows before I got a Ghast on the right level to be able to return the fireball and make contact.
It took 2 fireballs to take the Ghast down, and worked best when I was slightly higher than it.
I had a potion of fire resistance and 50+ arrows to play with and couldn't make contact at all during my first try, but with autosave disabled I reloaded my previous save and got it quite quickly on the next attempt.

Before entering the Nether, pick up a sword and fill up your health with a steak. Once you're THROUGH THE PORTAL (1:08), dig your way to the main floor and look for a Ghast. Most of the time you will see one immediately. The easiest way to deflect the fireball back is to spam RT/R2 once the ghast shoots them. Try to stay as close as possible to increase your chance of landing a hit.

In order to unlock this achievement, you will need to have access to the Nether by either obtaining enough obsidian to make a portal or by finding the portal in the Tutorial world (X: -236, Y: 94, Z: 203).
Once you enter the portal, you will spawn in the Nether. Be sure to keep the difficulty at least peaceful and be sure to have a sword or a bow and arrows.
If you hear high-pitched cat screams and see a white floating squid-thing, that's a Ghast, and it will shoot a fireball at you. For this achievement, you will have to deflect the fireball back at the Ghast using a sword or an arrow.

Ghasts are large, moaning enemies only found in the Nether; when they see you they will shoot large fireballs at you. To destroy a Ghast with a fireball, you must press to whack the fireball. However, this requires precise timing and aiming, so it will take a couple of times for the achievement to pop.
