In the tutorial level to the left of the starting area there is a small cave system with a dungeon in it at x: -41 y: 60 z: 8 with two saddles in it. Grab a fishing rod from the dock area and a carrot from the garden and lead your pig to the top of the area and have it walk off the wall.

Thanks to the new horse update this can be done in less than five minutes. Start up the tutorial world (a new one) and go on towards the horse. Inside the chest is a saddle. Next go down towards the house to the right of the fountain, in a item frame is a fishing rod. Next go to the animal area to the left of the fountain and inside the chest as you enter is a bunch of carrots. Craft the carrot on a stick. Place the saddle on the pig, jump on and wield the carrot on a stick. Lead it up to the sheer cliff, go as high as you can go, and jump into the cave they have conveniently provided for us to go in. A few seconds after you land the achievement should pop. If it didn't just repeat the process one more time.

In order to get this Achievement you will first need a Saddle which you can only find in random chests and in Dungeons.

Once you have obtained a Saddle find a Pig and fence it in either with a fence or any blocks that are easily destroyed and then begin digging a deep moat around the Pig you'll probably need to dig at least 20-25 blocks deep (this is a rough guess) Once you've done that get behind the Pig and press the action button to mount it and then destroy the blocks or fence directly in front of you and the Pig should run forward falling into the hole you dug and damage the Pig,

Note* You can use a carrot on a stick to get the Pig to move forward.

For this you will need a
Saddle
Carrot on a stick
Dirt
And a pig
Once you have those just build a 5 block high stair case with the dirt then get the pig and put the saddle on it. Once you do that get on the pig and get out the carrot on a stick then just look at the dirt stair case he will climb it then eventuley walk off.

So it seems the guides here are outdated.

What you want to do is load up the tutorial world, skip the tutorial, and head straight until you get to the beacon. Once you get to the beacon take a left, go past the merchants and you'll end up in a garden area, to the left you'll see donkeys and horses.

There will be a picture frame with a saddle right next to that gate, hit the saddle and it'll pop out of the frame, do a 180 and you'll see another picture frame with a fishing pole in it, do the same there and grab the fishing pole. Right behind you will be some carrots, grab some of those and head to the nearest work bench, the closest one will be near the merchants, take a left at the treasure chest in the merchant area.

Once you've crafted the carrot on a stick, head back towards the merchant area and you'll see cows, sheep, horses, etc. Put the saddle on one of the pigs and then mount. With the carrot on a stick equipped all you need to do now is find a high enough place to steer the pig off of. The easiest that I found right away was the minecart tutorial which is near the gardening tutorial.

Grab a 2x2 hole and 6 blocks deep. Put a saddle on a pig. use a fishing rod with a carrot and fall with the pig in the hole. When the pig dies, you got this archivement.

Saddles are rare items only found in secret places such as underground Dungeons, Abandoned Mineshafts, Nether Fortresses, or Desert/Jungle Temples. They can be found in chests that are in these hard to find places. Once you have a saddle, go up to a pig and press to put the saddle on the pig, then press it again to ride the pig.

While on the pig you have no control of where it goes unless you have a Carrot on a Stick. To craft this item you will need a Fishing Rod and a Carrot. Carrots can be found in the villages that are scattered across the world. Once you are in control of the pig, find a high place to jump off of and send the pig (and yourself) down. The achievement should unlock.
