In custom game in versus mode you can set frog to on under Mounts on the PLAYER TOOLS tab
The match can be started with one player
Once loaded in you probably want to wait for the piglin attack and kill them, and set up a couple of defensive buildings just in case
The frog mount can be seen on the map so you can set a marker, once you have mounted it chill in the water for 10 mins and pop pop
My achievement tracker did go up but not as expected, it went to 1%, then 10%, then 60% then nothing until the achievement unlocked, ymmv

I also changed Piglin aggression to none, which made it easier

Tracking is definitely all over the place but I also didnt realise it was only one versus match. Defo follow @Awesom3 JPC and make piglin aggression none so a single player versus match will last more than 10 minutes
