How to unlock the Return to Sender achievement in Minecraft: Xbox 360 Edition - Definitive Guide
First of all, to even be able to find a ghast, you must be able to enter the nether.

If you don't feel like building your own nether portal, you can always join a friend's game or use the tutorial level.
Then, to actually find a ghast, you have to look in specific areas. Ghasts only spawn in at least a 5×4×5 block area and only above ground. So looking over lava pools and in caves is useless.
Once you do find one, killing it with its own fireball can be extremely difficult. You have to hit the fireball while it's in mid-air, and it will fly back in the opposite direction. As long as it hits the ghast, it's an instant kill. To make it easier, you could also use a bow to hit the fireball while it's still near the ghast. Just try to aim it towards the ghast. It may take practice, but once you manage to get the rebounding down, the aiming is easy enough. I recommend trying to get the ghast stuck on something, taking away the need to strafe and jump around to hit the ghast.

There is a nether portal in the tutorial level (X 94, Y 62, Z -92), in the basement (dungeon?) of the castle near the beginning. You can access the basement through the central courtyard.

Making a cave at least five blocks high and fairly wide helped. I got a Ghast to spawn inside of it and the thing couldn't even move. Was much easier to hit.

Load up the Tutorial World
Get the Diamond Sword from the Hidden Chest on top of the book cases in the Enchanting Building (X: 33 Y: 68 Z: -34).
Save the game and reload on Peaceful.
Go through the Nether Portal no the small mushroom island in the top left of the map.
Co Ordinates (X: -264 Y: 71 Z: -368)
Once in the Nether, save your game (turn off auto saves) and reload on Easy. Then look for a Gast (Large floating white cubes that shoot fireballs) When it shoots a fireball at you use to hit the fireball back at the Gast. The closer the Gast is the easier it will be to hit.
If you die, reload your save and keep reloading until you get it

Ghasts are large, moaning enemies only found in the Nether; when they see you they will shoot large fireballs at you. To destroy a Ghast with a fireball, you must press to whack the fireball. However, this requires precise timing and aiming, so it will take a couple of times for the achievement to pop.
